General Tso's Chickens Are Cooked In The Fall

It is not known for certain whether all these generals really existed, but one of them, General Tso, is indeed a historical character who lived during the Qing dynasty. The name appears to be the result of confusion when translating from the Cantonese dialect spoken in the southern province of Hunan to Mandarin. The name of the dish is consonant with one of the parts of the general's name. And since the word "general" is pleasant to the Chinese ear, no matter what dialect speaks its owner, it stuck with the food. By the way, one of the variants of the name is "general's chickens" or "general's style chickens" without mentioning the name of a particular general.

Now that we have roughly figured out the general's attributes, it should be said about why this dish is generally good. Crispy Tso's chicken pieces should be sweet and slightly spicy, which is delicious when combined with unleavened rice. Another thing is that this dish cannot be called dietary. In the original, chicken is fried in boiling oil, but you can also roast it in the oven, as I actually did.

When I cook "General Tso's chickens" next time, I will cut the chicken into smaller pieces - this is more convenient to eat with chopsticks. As for the title of this post, the mention of autumn is, of course, for a catchphrase. In fact, the dish can be prepared all year round. I don't think that with such a confusing history of the origin of the dish, my slight liberty will confuse someone.

Ingredients

one pound chicken breast, cut into chunks

5 tablespoons sherry

two tablespoon cornstarch or arrowroot

one tablespoon of hoisin

two tablespoon water

two tablespoon i am willow

one tablespoon honey

one tablespoon rice wine vinegar

one teaspoon sesame oil

two teaspoons canola oil

one teaspoon ginger

one can of chopped chestnuts, drained

1/2 teaspoon crushed red pepper

two cloves garlic, minced

two stalks of celery, chopped

one medium red pepper, chopped

3 green onions, chopped

4 cups rice, cooked

instructions

Mix 2 tablespoons of sherry, 1 tablespoon of cornstarch and hoisin. Stir the chicken into the mixture until it is well coated; postpone.

Combine 3 TAB sherry, water, soy, honey, vinegar, sesame oil, and 1 tablespoon of cornstarch in a bowl; postpone.
